4th Grade: Vegetable Spring Roll, Fruit Leather

Some of the comments the kids made:

“Mmm! Mmm! Mmm!”
“This spring roll is so much better than the ones we get at the store.”
“Not only does this look delicious, it also looks so pretty.”
“I like to watch you make the spring rolls.”

The colorful nasturtiums flowers are in full bloom and a sign that Spring is here. There wasn’t enough lettuce and leafy dark greens to make a salad for 90 kids so Vegetable Spring Rolls was a refreshing way to feature the harvest. One kid could only say,”Mmm! Mmm! Mmm!” while he finished his food and even drank the dipping sauce. I got a chance to do a spring roll demo and showed them that these simple ingredients could turn into something delicious. Some were so intrigued with the rice paper, they thought the parchment paper under the Homemade Fruit Leather was edible too. 🙂
