1st Grade: Nopalitos, Fruit Leather

Another big thanks to Eleu at The Venice Learning Garden for these organic Prickly Pear Cactus pads, also known as nopal. This plant is very adaptable and can tolerate a wide range of temperature and moisture levels. It grows in the United States, Mexico, South America, Africa, Australia, and the Mediterranean. Nopal is said to be high in fiber, B vitamins, magnesium, and iron. To my surprise, the cactus salad was a big hit with the kids! Get the recipe for the Nopalitos and Homemade Fruit Leather.
